4 dozen puffs
288 gramswater
126 gramsunsalted butter
4 gramskosher salt
1 gramground black pepper
180 gramsall-purpose flour
300 gramseggs
126 gramsGruyère cheese, shredded
  1. Bring water, butter, salt, and pepper to a simmer.
  2. Remove from heat. Stir in flour.
  3. Return to heat and stir until dough pulls away from sides of pan and bottom of pan is clean.
  4. Transfer to mixer.
  5. Slowly add eggs one at a time until dough pulls away from sides of bowl but then grabs back on again.
  6. Stir in cheese.
  7. Scoop dough into portions. Freeze overnight.
  8. Heat oven to 375 degrees (standard). Spray gougères lightly with water.
  9. Place gougères in oven. Immediately lower oven temperature to 350 degrees.
  10. Bake for 25 to 30 minutes, until golden brown (rotating pans after 20 minutes).
  11. Lower temperature to 325 degrees and bake for about 10 minutes until gougères are light and feel hollow.
