288 grams | water |
126 grams | unsalted butter |
4 grams | kosher salt |
1 gram | ground black pepper |
180 grams | all-purpose flour |
300 grams | eggs |
126 grams | Gruyère cheese, shredded |
- Bring water, butter, salt, and pepper to a simmer.
- Remove from heat. Stir in flour.
- Return to heat and stir until dough pulls away from sides of pan and bottom of pan is clean.
- Transfer to mixer.
- Slowly add eggs one at a time until dough pulls away from sides of bowl but then grabs back on again.
- Stir in cheese.
- Scoop dough into portions. Freeze overnight.
- Heat oven to 375 degrees (standard). Spray gougères lightly with water.
- Place gougères in oven. Immediately lower oven temperature to 350 degrees.
- Bake for 25 to 30 minutes, until golden brown (rotating pans after 20 minutes).
- Lower temperature to 325 degrees and bake for about 10 minutes until gougères are light and feel hollow.
