cashew brittle
1¾ pounds
12 ouncessalted, roasted cashews
½ cupwater
1/3 cuplight corn syrup
2 cupsgranulated sugar
4 ouncesunsalted butter
½ teaspoonbaking soda
2½ teaspoonskosher salt
  1. Place cashews in 200 degree oven to warm.
  2. Coat baking sheet with nonstick cooking spray. Hold in warm oven.
  3. Cook water, corn syrup and sugar over high heat without stirring until dark amber.
  4. Whisk in butter.
  5. Remove from heat. Add baking soda and salt. Fold in warm cashews.
  6. Pour onto prepared pan. Cool and break into pieces.
  7. Store at room temperature.
