cashew brittle
1¾ pounds
| 12 ounces | salted, roasted cashews |
| ½ cup | water |
| 1/3 cup | light corn syrup |
| 2 cups | granulated sugar |
| 4 ounces | unsalted butter |
| ½ teaspoon | baking soda |
| 2½ teaspoons | kosher salt |
- Place cashews in 200 degree oven to warm.
- Coat baking sheet with nonstick cooking spray. Hold in warm oven.
- Cook water, corn syrup and sugar over high heat without stirring until dark amber.
- Whisk in butter.
- Remove from heat. Add baking soda and salt. Fold in warm cashews.
- Pour onto prepared pan. Cool and break into pieces.
- Store at room temperature.
