146 gramsvegetable oil
100 gramseggs, lightly beaten

51 gramsgranulated sugar
1 gramground cinnamon
28 gramsunsalted butter, melted
  1. Heat oven to 375 degrees. Line muffin tins with paper liners.
  2. Combine dry ingredients in large bowl.
  3. Combine wet ingredients in medium bowl.
  4. Stir wet ingredients into dry ingredients until just moistened. Allow batter to hydrate for 30 minutes.
  5. Fill muffin tins. Bake for 15 to 20 minutes.
  6. Combine sugar and cinnamon for topping.
  7. Brush tops of hot muffins with melted butter.
  8. Dip muffin tops in cinnamon sugar.
