meringue cookies
4 dozen cookies
2egg whites, room temperature
½ teaspooncream of tartar
2/3 cupgranulated sugar
1 teaspoonvanilla extract
1 cupmini chocolate chips
1 cupfinely chopped walnuts
  1. Preheat oven to 225 degrees. Line baking sheet with parchment paper.
  2. Whisk egg whites, cream of tartar, and sugar over simmering water until sugar dissolves and mixture is very thin and warm.
  3. Remove from heat and whisk on high speed until stiff peaks form, about 5 minutes. Add vanilla extract.
  4. Fold in chocolate and nuts. Scoop onto baking sheet.
  5. Bake until firm, about 1 hour.
  6. Turn off oven and continue drying until cooked, about 1 more hour.
  7. Store in an airtight container.
