Russet potatoes, rough cut
vegetable oil
kosher salt
ground black pepper

mayonnaise

ground paprika

cayenne pepper

garlic, minced

cilantro, chopped
Heat oven to 450 degrees.
Toss potatoes with oil, salt, and pepper.
Roast potatoes 30 minutes until browned.
Mix remaining ingredients. Toss with hot potatoes.
