6Russet potatoes, rough cut
vegetable oil
kosher salt
ground black pepper
2 cups (416 grams)mayonnaise
1 tablespoonground paprika
1 teaspooncayenne pepper
6 clovesgarlic, minced
¼ cuplime juice
1 bunchcilantro, chopped
  1. Heat oven to 450 degrees.
  2. Toss potatoes with oil, salt, and pepper.
  3. Roast potatoes 30 minutes until browned.
  4. Mix remaining ingredients. Toss with hot potatoes.
