mocha rum sauce
1½ cups
2/3 cup
granulated sugar
¼ cup
unsweetened cocoa powder
3 ounces
unsalted butter
2/3 cup
heavy cream
1/8 teaspoon
kosher salt
2 teaspoons
instant espresso
3 tablespoons
dark rum
½ teaspoon
vanilla extract
Sift together sugar and cocoa.
Melt butter.
Whisk in cream, sugar, cocoa, and salt.
Simmer 5 minutes.
Whisk in coffee, rum, and vanilla.
