mocha rum sauce
1½ cups
2/3 cupgranulated sugar
¼ cupunsweetened cocoa powder
3 ouncesunsalted butter
2/3 cupheavy cream
1/8 teaspoonkosher salt
2 teaspoonsinstant espresso
3 tablespoonsdark rum
½ teaspoonvanilla extract
  1. Sift together sugar and cocoa.
  2. Melt butter.
  3. Whisk in cream, sugar, cocoa, and salt.
  4. Simmer 5 minutes.
  5. Whisk in coffee, rum, and vanilla.
