8 ouncescream cheese, room temperature
10½ ouncesgoat cheese, room temperature
2 clovesminced garlic
½ teaspoonminced thyme leaves
3 tablespoonsminced Italian flat leaf parsley
¾ teaspoonkosher salt
½ teaspoonground black pepper
[SANDWICHES]
24 slicesmuesli bread
1hothouse cucumber, not peeled, thinly sliced
  1. Combine spread ingredients in stand mixer until well mixed.
  2. Spread each slice of bread with goat cheese mixture.
  3. Place cucumbers on half of bread slices, goat cheese side up.
  4. Top with remaining bread, goat cheese side down.
