blue cheese sauce

4 tablespoonsunsalted butter
1large yellow onion, thickly sliced
1 cupheavy cream
½ cupcrumbled blue cheese
kosher salt
ground black pepper
  1. Caramelize onion in butter.
  2. Add cream, reduce by half.
  3. Stir in blue cheese until melted.
  4. Season with salt and pepper.
