unsalted butter

large yellow onion, thickly sliced
1 cup
heavy cream
½ cup
crumbled blue cheese
kosher salt
ground black pepper
Caramelize onion in butter.
Add cream, reduce by half.
Stir in blue cheese until melted.
Season with salt and pepper.
