chipotle barbecue sauce

2 tablespoons | vegetable oil |
1 | yellow onion, chopped |
4 cloves | garlic, chopped |
½ cup | water |
1 cup | ketchup |
1 tablespoon | red wine vinegar |
1 tablespoon | Worcestershire sauce |
1 tablespoon | molasses |
1 tablespoon | honey |
1 tablespoon | Dijon mustard |
2 tablespoons | chipotle purée |
2 tablespoons | dark brown sugar |
2 tablespoons | ancho chili powder |
1 tablespoon | ground paprika |
| kosher salt |
| ground black pepper |
- Sweat onion in oil until translucent.
- Add garlic and cook 1 minute.
- Add remaining ingredients and simmer 15 minutes.
- Purée with hand blender.
