[DRESSING]
¼ cuplemon juice
2 clovesgarlic
1 teaspoonDijon mustard
kosher salt
ground black pepper
½ cupextra virgin olive oil
[SALAD]
10 ouncesbaby arugula
1 ounceParmesan cheese, shaved
  1. Place lemon juice, garlic, mustard, salt, and pepper in food processor. Gradually blend in olive oil.
  2. Toss arugula and Parmesan with dressing.
