[DRESSING] |
¼ cup | lemon juice |
2 cloves | garlic |
1 teaspoon | Dijon mustard |
| kosher salt |
| ground black pepper |
½ cup | extra virgin olive oil |
[SALAD] |
10 ounces | baby arugula |
1 ounce | Parmesan cheese, shaved |
- Place lemon juice, garlic, mustard, salt, and pepper in food processor. Gradually blend in olive oil.
- Toss arugula and Parmesan with dressing.
