Serve on Caesar salads.
| 2 pounds | chicken breasts |
| [MARINADE] |
| ¾ cup | lemon juice |
| 2 cloves | garlic |
| 2 teaspoons | kosher salt |
| 1 teaspoon | ground black pepper |
| 1 tablespoon | thyme leaves |
| ¾ cup | extra virgin olive oil |
- Mix lemon juice, garlic, salt, pepper, and thyme in blender. Gradually blend in olive oil.
- Marinate chicken overnight.
- Season chicken breasts. Roast at 375 degrees or grill to internal temperature of 165 degrees.
