Vary by forming raw meatballs around frozen ricotta cheese balls. Bake immediately. Serve with marinara sauce over pasta or on sub rolls with mozzarella cheese.
6 cupsfresh bread crumbs
1 1/3 cupswhole milk
2 teaspoonsdried oregano
2 teaspoonscrushed red pepper flakes
2 tablespoonskosher salt
1 tablespoonground black pepper
2 cupsgrated Asiago cheese
1 cupminced Italian flat leaf parsley
6 tablespoonsextra virgin olive oil
4eggs, lightly beaten
2 poundsground beef
1 poundground pork
1 poundground turkey
1 poundsweet Italian sausage
8 ouncesprosciutto, minced
  1. Combine all ingredients except meats in large bowl.
  2. Add meats. Combine lightly with hands.
  3. Shape into 2-inch round meatballs.
  4. Bake at 400 degrees for 35-40 minutes.
