ricotta cheese
2 cups
4 cupswhole milk
2 cupsheavy cream
1 teaspoonkosher salt
3 tablespoonswhite wine vinegar
  1. Bring milk, cream, and salt to a full boil. Remove from heat.
  2. Stir in vinegar and allow mixture to stand for 5 minutes.
  3. Strain into cheesecloth-lined sieve. Allow to drain for 30 minutes.
