shrimp rémoulade

2 poundseasy peel jumbo shrimp
[BOIL]
1 gallonwater
½ cupkosher salt
¼ cuppaprika
1 teaspooncayenne pepper
1 teaspoongarlic powder
¼ cupfresh lemon juice
4bay leaves
1small onion, sliced ¼-inch thick
1 headgarlic, halved crosswise
1large thyme sprig
1 tablespoonblack peppercorns
1 tablespoonground coriander
[TO SERVE]
5 ouncesbaby arugula
1 recipeRémoulade
  1. Combine ingredients for boil in large pot. Cover and simmer for 5 minutes.
  2. Add shrimp. Cover pot. Set timer for 10 minutes. (Turn off heat when simmer resumes.)
  3. Drain shrimp and chill until cold.
  4. To serve: Peel shrimp. Arrange on arugula. Serve with rémoulade.
